North Pass found the nine percent that was walking out the back

Nine shops, one roastery, and a shortfall nobody could explain until every change had to carry a reason.

Before Restro

A shared spreadsheet per shop, counted on Sundays, never reconciled. Milk was ordered on instinct.

The count that never matched

Every shop kept its own sheet and every sheet disagreed with the invoices. The gap got called shrinkage and treated as a cost of doing business, at around nine percent of drink cost.

Restro will not let you quietly retype a number. You post the difference as a correction with a reason, and next month’s report is built from those.

Recipes that told the truth

Writing down what actually goes into each drink found the problem in a fortnight. The latte recipe had been written for a smaller cup than the one they had used since 2022. Across nine shops, that was most of the gap.

Once a sale took off the right amount, what was left was small enough to look into rather than shrug at.

Ordering to a number, not a hunch

Set the level to reorder at and the level to hold, and the stock screen stops being a list of things you have run out of and becomes an order sheet.

The Sunday count went from most of a day to about ninety minutes.

We knew the number was wrong. We didn’t know if it was waste, theft, or the recipe being a lie. It turned out to be mostly the recipe being a lie.
